WHITE SAUCE VEGETABLE SANDWICH / ITALIAN VEGETABLE SANDWICH / ITALIAN CHEESE SANDWICH

Serves: 6-8 sandwiches

INGREDIENTS
1/4 cup American corn
1/4 cup peas
1/4 cup finely chopped mushroom (optional)
1 large finely chopped carrot
1/2 cup grated cheese
2 tbsp of flour (all-purpose or whole wheat four, any one can be used)
1 cup milk
salt, pepper and mixed herb or oregano to taste
12-14 bread slices
softened butter (micro for 10 seconds to make it soft) for applying on bread slices


METHOD:
Boil corn for 2-3 minutes in 1 cup of water till it doubles in volume. In other pan, boil all the veggies together. Once done transfer in a bowl and keep aside.

In same pan, roast flour with butter till little fragrant, don't turn it brown. Add milk and whisk it continuously till it becomes thick. Add boiled veggies and grated cheese. Add salt, pepper and oregano. Mix well and turn off the flame.



Take bread slice, keep 2-3 tbsp of veggie mix. Spread evenly on bread. Top with some more grated cheese. Cover it and spread softened butter evenly on bread, toast in sandwich maker or grill tawa. Flip and put butter on the other side and toast. 

Slice and serve.

I boiled corn separately as it gets cooked fast, you can cook corn with other vegetables.

If you're planning to pack in kids tiffin, prepare the filling one night prior. This will ease your work in morning.

7. Add grated cheese. Turn off the flame.








8. Take bread slice, keep the filling and top with some more grated cheese, adding more grated cheese is optional.








9.Cover with the slice. Put butter and toast from both the sides.









10. I used grilled sandwich maker, you can use tawa toasting from both the sides.








11. Close and toast.













12. Slice in desired shape.


13. Serve!
